This delicious Lebanese sauce is a normal accompaniment for schawarma, felafel, and similar dishes. The sauce itself is a little bitter by itself and should be, but it it gets diluted down with the main dish so that the bitterness goes away and one is left with a sour sesame sauce

90 g tahini
60g lime juice
handful of parsley
cold water to taste
1 clove garlic
1 pinch salt
Crush the garlic and salt together.
With a hand blender, food processor, or similar, blend the crushed garlic and salt mixture with the tahini and lime juice.
Thin with cold water until sauce is of desirable thickness and only a bit bitter.
Stir in chopped parsley to taste.
