Muffins are a HUGE part of our weekly menu! For us they serve as a really healthy snack that many times can replace a breakfast or a meal on the go. These easy Oat Pumpkin Muffins are absolutely fun to prepare. I carry in my pantry pumpkin puree all year round so I can make recipes like these not only when it’s the fall or pumpkin season. We literally enjoy them all year round! These muffins are Healthy and delicious, Vegan & Gluten Free, loaded with fiber and healthy components to keep you full and satiated for longer. I send them with my husband for work, and with my kids to school, and give it to my 1.5 year old to enjoy at the park. They are best when enjoyed with some warm and cozy drink on the side such as chai tea, or some pumpkin latte.
For the dry ingredients:
2 cups oat flour (from 2 cups rolled oats)
1 tsp baking soda
1 tsp cinnamon
½ tsp pumpkin spice (optional)
4 tbsp chocolate chips
For the wet ingredients:
¾ cup pumpkin puree
½ cup apple sauce
½ cup honey/ maple
1/3 cup soy milk
1/3 cup grapeseed or avocado oil
To garnish:
Chopped walnuts
Chocolate chips
Instructions:
1). Into a blender cup or vitamix, place 2 cups of rolled oats, and blend into a fine flour. Set aside.
2). Into a bowl, place all the wet ingredients: the pumpkin puree, apple sauce, honey, and oil. Mix very well.
3). To the same bowl with the mixed wet ingredients add the oat flour that we prepared, along with the spices, baking soda, and chocolate chips.
Mix until very well combined
4). Prepare a muffin tray lined with muffin liners and scoop an equal amount of batter into each cavity. I love using my 1/3-/1/2 cup measuring cups for that.
5). Place the muffins in the oven and bake for 25-30 minutes, checking with a toothpick to see that they are all baked inside.
6). Remove from the oven and let cool for about 25 minutes to set.
Keep in the fridge and warm up for about 30-50 seconds in the microwave before serving.
