I had far too much fruit in my garden this year, so I did what any sensible person would do, and made fruit infused gin.
These make such cute homemade Christmas gifts for adults, and are so ridiculously easy to make. In this video I made a batch of plum gin (where I used a mixture of Victoria Plums and Wild Cherry Plums) and a batch of apple and blackberry gin, that tastes like bottled autumn.
All you need is fruit, sugar, gin, some sterile glass jars, and something to strain it through (I used muslin cloths, which are ideal, but coffee filters or even a clean t shirt will do in a pinch), and space in a cool datk cupboard for a few weeks.
rough quantities:
300g fruit.
sugar amount varies depending on the recipe. most call for around 150g of caster sugar for 300g of fruit. You can always add more sugar after the fruit has steeped for a while, but you can't take sweetness out if you add too much, so proceed with caution and add to taste. for mine I used about 125g for the plum gin, and 200g for the apple and blackberry.
one cinnamon stick or bay leaf if desired.
one litre of gin, any brand is fine.
I was very rough and ready with my quantities and it turned out great. Just make sure you have enough sugar to cover your fruit, and all the fruit is submerged in alcohol.
leave for 4-6 weeks for plum gin, and 2 weeks for apple and blackberry, shaking daily to help the sugar dissolve. Keep in a cool, dark place with a tightly closed lid for up to a year.
