Serves 5-6
¾ Cup of each ;
Diced Carrot, Celery, Cabbage or Kale, Onion, Potatoes
½ cup of each ;
Diced Bell Peppers, Mushrooms, Chopped Fresh Parsley, Green Beans
⅓ cup Orzo Pasta
1½oz butter 3 tbspns olive oil
1 tbspn oregano
1 teaspn of each salt sugar & pepper
4 cloves minced garlic
2 tbspns tomato paste
14oz can chopped tomatoes
70oz (2 litres) broth chicken or veg
*Sub pasta with macaroni or another small pasta
*chunky croutons are perfect with this soup
add finely chopped prosciutto if you need a meaty version
