SPICY ANCHOVIES FRIED RICE RECIPE
(NASI GORENG IKAN BILIS PEDAS)

Ingredients:
1 bowl of cooked rice (2-3 pax)
200gm cabbage, cut into bite size
2 soft-boiled eggs, chopped roughly
1 tsp of anchovies stock powder (stok ikan bilis)
3 tbsp light soy sauce
3 tbsp spicy chilli flakes
Mixed fresh red chillies (cili merah+cili padi)
White pepper powder
Celery /Parsley leaves (daun sup)
Either use mortar-pestle or dry blender:
Coarsely ground them: (A)
Handful of cleaned, washed anchovies (ikan bilis)
2 tbsp dried prawns, soaked in hot water, drained
8 shallots or 1 medium size red onion
3 cloves of garlic
4 fresh kaffir lime leaves, remove middle stem
Oil for cooking
30ml water (2 tbsp)
Method:
Heat up 3 ½ tbsp of oil on medium low flame first and then saute (A) until fragrant, 3-4 minutes.Bring down the flame to low now.
Then, add the chilli flakes, stock powder and cabbage. Stir fry for 2 minutes. Sprinkle some water and add some soy sauce
Now, add in the rice and mix well until all the ingredients are well combined. Sprinkle again some water. Taste for seasoning.
Finally, add in the egg and stir fry on medium flame. A dash of pepper powder, some celery leaves and cut fresh red chillies.
Serve hot with lime wedges. Enjoy :)
