°°° INGREDIENTS °°°
FOR THE POTATO BITES DOUGH
• 2-3 Medium-sized POTATOES (about 440 - 450 g)
• 1 cup,( 200g ) Potato Starch OR Corn Starch (But preferably Potato starch for best Taste )
• ½ Teaspoon of salt OR to taste
• Water 150ml
FOR THE CHILLI GARLIC SAUCE
• 6-7 cloves of Garlic 🧄 , (Minced)
• 2-3 tablespoons neutral cooking oil (such as vegetable or Olive oil)
• 3-4 tablespoons soy sauce (adjust to taste)
• 1 teaspoon chili powder or Paprika Powder (or Korean red pepper powder/gochugaru for a more authentic flavor)
• ½ Tsp of salt and pepper
• 1 teaspoon sugar
• 1-2 tablespoons chopped Green Onions
• 150ml

STEP 1: PREPARE THE POTATOES
Peel and dice the potatoes into small, uniform pieces.
Place the potato pieces in a pot of cold, water and bring to a boil. Cook until the potatoes are fork-tender, which should take about 10-15 minutes.
Drain the potatoes well and let them dry for 3-4 minutes. While they are still warm, mash them thoroughly until no lumps remain in potatoes.
STEP 2: MAKE THE DOUGH
Add the Potato starch and add Pinch of salt to the mashed potatoes.
add 150 ml of Water & Knead the mixture with your hands to form a smooth, soft dough. If the dough is too sticky, add more corn starch, one tablespoon at a time, until it is no longer sticky and holds its shape.
STEP 3: SHAPE AND COOK THE BITES
Divide the dough into small, marble-sized pieces and roll them into smooth balls.
Use the back of a chopstick or the mouth of a small bottle to press down in the center of each ball, creating a mushroom-like shape.

This shape helps the sauce stick to the bites.
Carefully drop the potato bites into the boiling water.
Cook for 2-3 minutes, or until the potato bites float to the surface.
Using a slotted spoon, immediately transfer the cooked bites into a bowl of ice-cold water to stop the cooking process and maintain their chewy texture.
Once cooled, drain them well and set them aside.
STEP 4: PREPARE THE CHILLI GARLIC SAUCE
In a bowl, combine the minced garlic, chili flakes, soy sauce, sugar and 2 Tablespoons of the chopped green onions.
Heat the cooking oil in a small pan until it is very hot but not smoking.
Carefully pour the hot oil over the ingredients in the bowl. The oil should sizzle and cook the garlic and chili, releasing their fragrant aroma. Stir everything together until the sugar dissolves.
STEP 5: COMBINE AND SERVE
Add the cooled and drained potato bites to the bowl with the hot sauce.
Gently toss the potato bites until they are evenly coated in the delicious sauce.
Transfer the coated bites to a serving plate. Garnish with the remaining green Onions
