Traditional Greek spinach pie with feta cheese. Really delicious and crunchy! A recipe that you will love!
For the filling you will need:
2 onions
1 kg fresh spinach
400 g feta cheese
80 g rice
1 egg
dry mint (optional)
salt
For the dough you will need:
1 kg strong flour (Manitoba type)
15 g salt
550 ml water
1 tbsp white vinegar
Tips:
1. Start by preparing the filling so while is cooling you can prepare the dough. Is very important not to use the filling in room temperature and not too hot.
2. Adding the rice in the filling, after turning off the heat, will help you obtain a more crispy result, as the rice absorb the humidity while the pie is in the oven.
3. Let your dough rest, so that you can easily roll it out.
4. Don't forget to grease every time between the layers. (For the 2nd way of making spanakopita, you can put more layers if you prefer)
5. Is very important to gently cut your pie before baking it, because afterwards the layer on top will break in small pieces.
6. Best serve while is warm and crunchy!
