Soft Idli & Groundnut Chutney Recipe
Ingredients
For Idli
Urad dal – 1 cup
Idli rava – 2½ cups
Salt – to taste
Water – as required
Ghee – for serving
For Groundnut Chutney
Groundnuts (peanuts) – 1 cup
Ginger – small piece (chopped)
Green chillies – 6–7
Salt – to taste
Red chilli powder – to taste
Turmeric powder – a pinch
For Tempering
Oil – 1 tbsp
Chana dal – 1 tbsp
Mustard seeds – 1 tbsp
Dry red chillies – 4–5
Method
Preparing Idli Batter
Wash urad dal thoroughly, add sufficient water, and soak for 3–4 hours.
In a separate bowl, wash idli rava, add enough water, and soak for 3–4 hours.
Drain the soaked urad dal, add it to a mixer grinder, add a little water, and grind to a smooth and fluffy batter.
Transfer the batter to a large deep bowl.
Squeeze out excess water from the soaked idli rava and add it to the urad dal batter.
Mix well using your hand. Cover and keep aside overnight for fermentation.
Making Idli
After fermentation, gently mix the batter.
Take a small portion of batter in a bowl, add a little water and salt, and mix well.
Grease the idli plates lightly and pour the batter into the molds.
Add a little water to the idli cooker, place the idli plates inside, and close the lid.
Steam the idlis for 10–15 minutes on medium flame.
Turn off the heat and let it rest for 2 minutes.
Preparing Groundnut Chutney
Dry roast groundnuts in a pan without oil for 10–15 minutes until aromatic. Keep aside to cool.
Transfer roasted groundnuts to a mixer grinder.
Heat 1 tbsp oil in a small pan, add chopped ginger and green chillies, and fry for 1 minute.
Add salt, red chilli powder, and turmeric powder, mix well, and switch off the flame.
Add this mixture to the grinder and grind to a smooth chutney, adding water as needed.
Transfer the chutney to a bowl.
Tempering
Heat oil in a small pan.
Add dry red chillies and fry for 30 seconds.
Add chana dal and mustard seeds and fry until they splutter and turn golden.
Pour the tempering over the groundnut chutney and mix well.
Serving
Gently open the idli cooker and remove idlis using a spoon.
Spread ghee over hot idlis.
Serve soft idlis with groundnut chutney.
You can also enjoy them with hot sambar 😋
