Mashed Green Bananas

You can do so many things with bananas whether they are green or ripe. Green bananas for example can be boiled, fried, mashed, curried, used as stuffing, used in dips and salads (similar to potato salad). You can also use it to make porridge, banana chips and more! They are a great source of fiber, very rich in vitamins and minerals. Green bananas are also known to help in controlling blood glucose, a benefit for people with diabetes. I’m excited to share this mashed, green banana recipe with you. Enjoy!
Ingredients:
• 5 green bananas
• 1 small, red bell pepper
• 1 small, yellow bell pepper
• 1 clove of garlic peeled
• 3 stalks of scallions chopped
• 1 medium shallot (or onion) chopped
• 6 sprigs of thyme
• 1 teaspoon sea salt
• ¼ teaspoon paprika
• 1 tablespoon butter
• ¼ cup extra virgin olive oil
Method
• Combine bell peppers, garlic, shallot, scallion, and thyme in a small oven proof dish, add olive oil and roast for 10 to 15 minutes.
• Place a deep pot on the stove with enough water to cover the bananas. Add salt.
• Remove the tip of the top and bottom of the bananas (without peeling). Then wash the bananas, use your knife to make 3 slits on them. This will make it easier to remove the banana skin once it’s cooked.
• When the water is boiling, add the bananas and vegetable bouillon, then cover.
• Cook until bananas are soft.
• When bananas are cooked, carefully remove the skin and place bananas in a bowl.
• Then use a masher to mash the bananas, add roasted herbs and use a spoon to combine everything together. Use the masher to mashed bananas again to ensure that the garlic is mashed out.
• Add butter, black pepper and paprika to your taste, and mix thoroughly. Add more salt if needed.
Chef note:
• Bell peppers are optional. You can use your herbs or favorite vegetables.
• If you don’t have shallots, onion is a great substitute.
• You can use plain garlic or add some red crushed pepper to olive oil and herbs.
• If you don’t have olive oil, any healthy oil will do.
