Ingredients:
500g dried chickpeas
1 onion
2 cloves of garlic
Half a bunch of parsley
2 tbsp water
1 tsp cumin
1 tsp coriander
1/2 tsp salt
1/2 tsp baking soda
For the stuffing:
2 tbsp olive oil
2 finely chopped onions
2 tbsp sumac
2 tbsp hot sauce
For coating:
1/2 cup white sesame seeds
For serving:
4 pita bread
2 tomatoes, sliced
Instructions:
Soak the chickpeas in cold water for 24 hours.
In a food processor, grind chickpeas, onion, garlic, parsley, water until well combined.
Transfer the falafel mixture to a glass dish, season with salt, spices, and baking soda, then mix well.
Let the mixture rest for 15 minutes.
For the stuffing, sauté onions in olive oil over low heat for 10 minutes, stirring continuously.
Transfer the cooked onions to a dish and let them cool for 5 minutes.
Add the remaining stuffing ingredients, mix well.
Shape the falafel mixture using a mold, dipping the mold in water to ease the shaping process.
Form a ball of falafel, make an indentation, add 1 tsp of stuffing, cover with falafel mixture, and coat in untoasted sesame seeds.
Fry in preheated deep oil, starting with high heat, then reducing to medium heat while stirring until golden brown.
Remove from the oil using a sieve and serve warm.
