Black Bean Soup recipe:
Ingredients:
1 bag black beans or 1 large can of black beans (drained and rinsed)
2 cartons beef broth
1 cup diced carrots
1 cup diced celery
1.5 cups diced onion
1 can Rotel (undrained)
1 can petite diced tomatoes (undrained)
1 lb bacon, cut into pieces
1 package cubed ham
4 ears of corn, kernels cut off the cob
4 links hot Italian sausage, removed from casing and crumbled
1 tsp garlic powder (adjust to taste)
1 tsp cumin (adjust to taste)
Salt & pepper to taste
Water (as needed)
Instructions:
Sauté the Veggies: In a large pot or Dutch oven over medium heat, add the diced onion, carrots, and celery. Cook until softened and translucent, about 5 minutes.
Simmer Bacon, Ham & Italian Sausage: Stir in the bacon, cubed ham, and crumbled hot Italian sausage. Cook for about 10 minutes, stirring occasionally, until the sausage is browned and the flavors meld.
Add Seasonings & Beans: Stir in the garlic powder, cumin, salt, and pepper, followed by the drained, soaked black beans (or canned beans if using).
Combine Broth & Tomatoes: Pour in the beef broth, Rotel, and petite diced tomatoes. Stir to combine.
Simmer:
If using dried beans: Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, stirring occasionally. Add water as needed if the soup thickens too much.
If using canned beans: Simmer for about 30-45 minutes to allow the flavors to meld.
Blend the Soup: Once the beans are fully cooked and tender, use an immersion blender to blend the soup until smooth (or blend in batches using a standard blender). Adjust consistency with additional broth or water if needed.
Add Corn & Sliced Sausage: Stir in the fresh corn kernels and sliced sausage. Let the soup simmer for another 15-20 minutes until the corn is tender and the sausage is heated through.
Adjust Seasoning & Serve: Taste and adjust seasonings if needed. Serve hot with crusty bread or over rice!
