INGREDIENTS :
4 cups of coarsely ground raw mango ( with skin)
1 cup Coarsely ground garlic
1 cup of oil ( you can use any kind of oil)
1 cup of medium hot chilli powder.
1 tsp turmeric powder
1/2 cup of salt ( don’t put at once. First add half of it , then add more according to the taste.)
Musterd ( brown colour or small size )seeds for tempering
2 tsp of Asafoetida or hing (optional)
FOR POWDER:
2 tbs mustard seeds ( black not brown )
1 tbs Fenugreek seeds
NOTE;
1 ) Mangoes should be of room temperature.
2 ) If possible, try to use mangoes which are plucked same day.
3 ) Soak mangoes in the water for about an hour.
4 ) Then wash them thoroughly & wipe with dry cloth.
5 ) Don’t add salt at once. first add half of it and add remaining salt according to your taste.
6 ) sterilise the jar in which you are going to store the pickle
7 ) if you refrigerate it. It will last for about a year
8) This pickle is best way to add more garlic in your diet for some health or medical benefits.
9) This is the ideal amount of garlic for normal pickle. But you can increase the quantity of garlic if you want to consume more garlic for medical purpose.
