I saw this salad on IG and needed to try it. I'm not necessarily someone who craves salads, but this one is different. I've been craving it since I made it, which was almost a month ago. Recipe below. I cooked the bulgur wheat in bone broth for extra protein. I had a mishap at the beginning with some spillover and ended up having more risotto-y bulgur wheat. I rinsed it and it was great. Check your Enjoy :)
1 cup bulgur wheat, uncooked (cook according to package instructions -- I used bone broth instead of water for added protein and flavor. Make sure you season the liquid either way!)
1 cup cucumber, chopped
½ cup parsley, chopped
½ cup mint, chopped
⅓ cup red onion, chopped
½ cup roasted and salted pistachios, chopped
1 15 ounce can chickpeas, drained and rinsed
Juice of 2 lemons
¼ cup extra virgin olive oil
sea salt, to taste
ground pepper pepper, to taste
½ cup feta cheese, crumbled
Toss everything together and enjoy :)
