RECIPE:
Prep Time 50 minutes
Cook time 25 minutes
Makes 10 small dhalpuri
INGREDIENTS
1 Cup yellow split peas
4 Cups Water
1/2 Tsp salt
To make the filling
Boiled split peas
1 Tbsp fresh Ground cumin
1 Tsp vegetable powder
2 Tsp all purpose seasoning
2 Medium size garlic cloves diced
1/8 Tsp turmeric
3 Tbsp butter
1 small red scotch bonnet pepper or wiri wiri pepper diced
1 stalk green onion diced
1 sprig diced Parsley
INSTRUCTIONS
Wash the split peas.
Soak it into some water overnight
Bring 6 Cups of water to a boil
Add the split peas to the pot
Cook for 12 minutes over a medium high heat
Add the salt 5 minutes after cooking, mix well
Continue to cook for 7 minutes until it's become medium firm in texture
Drain off the water using a colander
Let it cool completely (set aside)
Prepare the other ingredients
When ready to use
Add the seasonings, ground cumin, turmeric, butter and garlic in a food processor, blend it until it’ reaches a smooth consistency
Divide into two portions
Add the diced parsley green onion and peppers to the other portion, blend until smooth paste consistency forms
Set it aside until ready to use.
Dough Recipe:
1 1/2 Cup all purpose flour( 8 ounce)
1/2 Tsp baking powder.
1 Tbsp olive oil
1 Cup water
1 Cup extra all purpose flour
For dusting and kneading
1/3 Cup extra water if needed.
Measure and prepare all the ingredients first to be organized.
In a bowl add the flour and baking powder
Mix to combine
Add half cup water and the oil to the flour mixture
Mix until a soft dough forms
Adding the remaining water
While mixing
Add a little flour to the work surface
Then place the dough
Knead lightly for one minute
Divide into 10 pieces
Shape into a little dough balls
Flatten each piece to to 2 inch in diameter
Place it into the palm of your hands press down to shape it nicely
Then fill it with one scoop of the filling
Seal the ends by bringing it together, then flatten to 3 inch in diameter to distribute the filling to the ends ( set aside)
Continue with the remaining dough balls.
Roll out each piece to 1/4 inch in thickness
And 9 inches in diameter
Roll out gently and thinly at the ends
Cook on both sides for one minute on a heated tawa over a medium low heat
Brushing with oil.
Arrange on a platter when finished.
Serve warm and enjoy
Taste best with any curry
