👨🏻🍳We absolutely love using our Instant pot! It truly comes in handy on the days where you just don’t have the time to come home and make dinner. Prep in the morning, toss it in the Instant Pot for 7 hours, come home and it’s ready. Magical🧙♂️
*2 pounds chicken breast diced
*3 sweet potatoes peeled and diced
*1 yellow onion diced
*15 oz can Coconut Milk
*14.5 oz can diced tomatoes
*2 Tblsp tomato paste
*1 1/2 Tblsp Cumin
*1 1/2 Tblsp Sweet Curry
*1 Tblsp Ginger
*2-3 cloves chopped garlic
*1 tsp each Salt and Pepper
🌟I served this dish on a bed of my Pimento Dijon Roasted Cauliflower Side dish. 👉 • Pimento Dijon Roasted Cauliflower It was amazing!🌟
~Note~
In this video, I describe the time is different from what the picture describes. I ended up slow cooking this recipe for a total of 7 hours instead of 5 1/2 hours. If you dice the potatoes smaller, the 5 1/2 hour time will work out great though!
