"Pudalangai Chutney" is a South Indian chutney made from snake gourd (pudalangai), coconut, and spices. It's a delicious accompaniment to dosa, idli, or rice. Here's how you can make it:
*Ingredients:*
1 cup snake gourd (pudalangai), peeled and chopped
1/2 cup or 1 cup grated coconut
1-2 dry red chilies (adjust to taste)
1 Tomato
1 teaspoon chana dal
1 teaspoon coriander seeds
A small piece of tamarind (about 1/2 inch)
Salt to taste
1-2 tablespoons oil
Water (as needed)
*Instructions:*
Peel the snake gourd and chop it into small pieces. Remove any seeds if present.
Dry roast the chana dal, coriander seeds and red chilli until the dal turns golden. Cool it and coarse grind. Set aside.
In a pan, heat oil over medium heat. Add chopped snake gourd pieces and sauté for a few minutes until they become slightly tender.
Add the chopped tomato and continue to sauté.
To this, add the tamarind and the grated coconut, followed by salt.
Allow the cooked ingredients to cool down a bit.
In the blender with the coarsely ground powder, combine the cooked ingredients and grind everything into a smooth paste, adding water as needed.
You can temper this with mustard seeds and curry leaves or serve it as is.
