🥖 Cheesy Tandoori Chicken Star Bread approved by Gordon Ramsay
Ingredients
For Dough (2 Rotis / Star Bread Base)
• 2 cups all-purpose flour (maida)
• 2 tsp instant yeast
• 1 tsp sugar
• ¾ tsp salt
• ¾ cup warm milk (add gradually)
• 2 tbsp baking powder
For Tandoori Chicken Filling (Boneless, 750 g)
• 750 g boneless chicken, cut into small cubes
• ½ cup thick yogurt
• 1 tbsp red chili powder
• 1 tbsp coriander powder
• 1 tbsp cumin powder
• 1 tbsp onion powder
• 1 tbsp turmeric powder
• 1 tbsp tandoori masala
• Salt to taste
• 2 tbsp mustard oil or cooking oil
Other Ingredients
• 1–1½ cups mozzarella cheese
• 1 egg (for egg wash)
• Butter, melted (for topping)
• Fresh coriander, chopped (for garnish)

Instructions
Step 1: Prepare the Dough
1. Mix warm water, sugar, and yeast in a bowl. Let it sit 5–8 minutes until foamy.
2. In a separate bowl, combine flour and salt.
3. Add the yeast mixture and oil to the dry ingredients. Knead for 8–10 minutes until smooth and soft.
4. Cover the dough and let it rise for 45–60 minutes, until it doubles in size.
5. Punch down the dough and knead for 5 minutes.

Step 2: Prepare the Tandoori Chicken Filling
1. In a bowl, combine boneless chicken with yogurt, mustard oil, and all spices (1 tbsp each as listed).
2. Mix well so all chicken pieces are coated.
3. Marinate for 30 minutes to overnight in the fridge.

Step 3: Assemble the Star Bread
1. Divide the dough into 2 equal parts and roll one into a round roti shape. Place on a baking sheet.
2. Spread mozzarella cheese on the rolled dough.
3. Add the marinated tandoori chicken filling evenly.
4. Sprinkle another layer of mozzarella cheese over the chicken.
5. Roll out the second dough and place on top.
6. Press the center gently with a small bowl.
7. Cut the dough into 14 equal pieces radiating from the center.
8. Take two adjacent pieces, twist each two times, and join the ends to form a star shape.
9. Slightly press the edges to seal and repeat for all pieces.

Step 4: Baking
1. Brush the top with egg wash.
2. Bake in a preheated oven at 180°C (350°F) for 25–30 minutes until golden brown.
3. Remove from oven, brush with melted butter, and sprinkle fresh coriander on top.

• Slice to show the cheesy, fully cooked chicken inside.
• Serve hot with green chutney and raita.
