★ About: Here’s an authentic Victorian recipe ‘To Preserve Plums’ from Warne’s Model Cookery & Housekeeping Book, published in 1868. While this jam does call for a little more preparation than others, in our opinion, it’s well worth it. Whole plum kernels are added to the jam as it boils which are supposed to add an almondy dimension to the flavour.

Plums (any kind you like). Keep the stones.
Preserving sugar
Measurements: 1 lb (454g) FRUIT = ¾ lb (340g) SUGAR
