Authentic Kabuli Pulao Recipe | Kabuli Pulavu recipe | Afghani Pulao

Ingredients:
For the Rice:
3 cups Basmati rice
4 &1/2 cups water
salt
4 tbsp oil or ghee
1/2 KG lamb
2 Medium onion, sliced
1 teaspoon cumin powder
2 teaspoon cumin powder ( as per Your taste)
Salt -2-3 teaspoon
1 large carrots, julienned
1/2 cup raisins
1 tablespoon of Sugar
2 tbsp oil or ghee
Raitha:
1cup yoghurt
Green chillies
1/2 teaspoon cumin
Min leaves
Salt
Instructions:
Prepare the Rice:
Rinse the basmati rice thoroughly until the water runs clear. Soak it in water for 30 -60 minutes, then drain.
Cook the Meat:
In a pressure cooker , heat 1/4 cup of oil or ghee.
Add sliced onions and cook until golden brown.
Add the meat chunks, Cumin, salt, and pepper. Cook until browned and cooked through.
Add 3 cups of water.
Cook over high heat up to 1 whistle, then reduce the heat and cook over medium heat for about 5-6 whistle or until the meat is done.
In a heave bottomed pot, add 2 tablespoon of ghee
Add carrots and sugar , and cook for another 5-7 minutes.
Add raisins and fry for another 5 minutes.
Then remove it from the pot and drain.
Add the cooked meat to the same pot along with the stock.
Add the rice, salt and pepper.
Cover and Cook for 10 minutes over medium high heat.
Open the lid, add the raisins and carrots over the rice.
Place a kitchen under the lid, cover tightly
Reduce the heat to low and let it steam for 20-25 minutes to allow flavors to meld.
Switch off the heat and let it rest for 10 minutes before opening the lid.
Serve hot with yogurt or salad.
