How to make Sri-Lankan style Aubergine/Batu moju by Rinoza's Recipes!
(TASTY AND EASY RECIPE)
INGREDIENTS:
For frying:
Aubergine - 750 grams
Turmeric powder - half tsp
Salt - quarter tsp
Oil - 1 Litre
2 medium onions or shallots - 200 grams
Green chillies - 10
For cooking:
Oil - 3 tbsp
Cinnamon - 2 small pieces
Cloves - 4
Cardamom - 3
Mustard seeds - half tsp
Cumin seeds - 1 tsp
Curry leaves
1 medium onion
Salt to taste
Garlic cloves - 2
Ginger + garlic paste - 2 tsp
Turmeric powder - half tsp
Crushed chilli - 2 tsp
Mustard powder (crushed mustard seeds) - 2 tsp
Red chilli powder - half tsp
Sugar - 2 tbsp
Vinegar - 3 tbsp
Pepper powder - 1 tsp
Ketchup or Tomato sauce - 2 tbsp
