3. Rolling: The withered leaves are then rolled to break the cell walls and release the enzymes that will aid in oxidation.

4. Oxidation: The leaves are left to oxidize for a few hours, during which time they turn from green to brown, yellow, or black depending on the type of tea being produced.

5. Fixation: The oxidation process is stopped by heating the leaves to a temperature of about 200°F. This process is called fixation or kill-green, and it also helps to dry the leaves.

6. Sorting: The leaves are sorted by size and quality, with the best leaves being used to produce high-quality teas.

7. Packaging: The finished tea leaves are packaged into bags or tins and shipped to retailers or consumers.
