Ingredients
Dough
All-purpose flour: 3½ cups
Warm milk or water: 1 cup
Instant yeast: 2¼ tsp (1 packet)
Sugar: 1 tbsp
Salt: 1 tsp
Olive oil: 2 tbsp
Filling
Tomato sauce or red pepper paste (Salça): ½ cup
Sujuk (Turkish sausage), sliced: 5–6 oz (150–170 g)
Mozzarella or Kashar cheese (shredded): 1½ cups
Topping
Egg: 1 (beaten, for egg wash)
Sesame seeds or nigella seeds: 1 tbsp
Method
1. Prepare Dough:
Mix warm milk, sugar, and yeast. Rest 5 minutes.
Add flour, salt, and oil. Knead until soft and smooth.
2. First Proof:
Cover and rest 60 minutes until doubled.
3. Shape:
Roll dough into a long oval.
Cut slits along both sides, leaving the center intact.
4. Fill:
Spread sauce down the center.
Add sujuk slices and shredded cheese.
5. Braid:
Fold dough strips alternately over the filling to form a braid.
6. Finish:
Brush with egg wash. Sprinkle seeds.
7. Bake:
Bake at 400°F (200°C) for 18–22 minutes, until golden and bubbly.
✅ Tips
For less spicy, mix sujuk with mozzarella evenly.
For extra flavor, add ½ tsp dried oregano to the sauce.
