Описание: Today's Cocktail is the Monkeypod Mai Tai and comes to us from The Monkeypod Kitchen in Maui Hawaii. It's a really inventive and delicious reconstruction of a Mai Tai and given my absolute love for that drink, I felt we had to do it. So yes, this week's drink is not only another Mai Tai but also features some more advanced technique. Well really just another piece of equipment. We also made a very limited edition Educated Barfly Mai Tai glass. Snap these babies up because once they're gone, they're gone for good.

1oz (30ml) Dark Rum
1oz (30ml) White Rum
.5oz (15ml) Dry Curaçao
.75oz (20ml) Lime Juice
.5oz (15ml) Macadamia Nut Orgeat
Top Passion Fruit Foam

Macadamia Nut Orgeat
300g Warm Water
250g Caster Sugar
150g Roasted Macadamia Nuts
2 Dashes Orange Flower Water
Pinch of Kosher Salt

Passion Fruit Foam
1.5oz (45ml) Cold Water
1oz (30ml) Passion Fruit Puree
1oz (30ml) Simple Syrup
.5oz (15ml) Honey Syrup
1 Egg White
