Recipes below👇🏼
Sweet Potato Chili🍂:
2 C sweet potato or butternut squash, cubed
1 1/2 lbs ground beef
1 onion, diced
1/2 of a green pepper, diced
1 can black beans, drained & rinsed
1 can petite diced tomatoes
1 28 oz can crushed tomatoes
2 C chicken broth
1/2 tsp garlic powder
1/4 tsp oregano
1 1/2 tsp chili powder
1/4 tsp hot hungarian paprika (or 1/2 tsp paprika)
1/2 tsp red pepper flakes
1 tsp cumin
1/4 tsp cayenne
1/2 tsp salt
Optional: 2-3 shakes of franks original hot sauce
For garnish:
Avocado, shredded cheese, sour cream, and cilantro
Steam the squash in the microwave for 3 1/2 minutes.
Cook ground beef and drain grease. Add onions and green peppers and sauté until soft.
Add squash, crushed tomatoes, petite diced tomatoes, chicken broth, spices, and 2-3 shakes of hot sauce.
Bring to a boil, then turn heat to low and simmer for 10 minutes.
Garnish with avocado, shredded cheese, sour cream, and cilantro.
Baked Potato Soup🍂:
7 potatoes
1/4 C butter
1 medium onion, diced
1/3 C flour
5 C milk
2 C heavy cream
1 tsp salt
Black pepper
For topping: shredded cheese and bacon pieces
Wash potatoes, prick with a fork, wrap in foil, and bake at 400 for 1 hour, until soft in the center.
Once cool enough to handle, peel and coarsely mash.
Melt butter in a Dutch oven over medium heat. Add onion and sauté until tender.
Add flour and stir for one minute.
Stir in milk, heavy cream, salt and pepper. Then add potatoes.
Cook over low until thoroughly heated.
Top with shredded cheese and bacon!
Tortellini Soup🍂:
1 lb cooked & drained ground beef
1 tbsp butter
1/2 onion, diced
1/2 tsp garlic powder
3 tbsp flour
3 C chicken broth
1 28 oz can crushed tomatoes
3 tbsp tomato paste
1 tsp Italian seasoning
1/2 tsp dried basil (or 3 tbsp fresh basil)
1/2 tsp red pepper flakes
1 tsp salt
Black pepper
4 C cheese tortellini (or less, depending on your desired soupiness)
1/2 C grated Parmesan
1/3 C heavy cream
3 C spinach (optional)
Melt butter in a Dutch oven, add onions, and sauté until soft. Add garlic powder and stir for one minute. Add flour and stir for an additional minute.
Whisk in tomato paste. Slowly whisk in chicken broth, then pour in crushed tomatoes, ground beef, and spices.
Bring to a boil, then add tortellini and cook for 5 minutes.
Stir in the Parmesan and heavy cream. Add spinach, if using.
