Recipe:
2 pork tenderloins (about 2–2.5 lbs total)
2 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp dried thyme
Glaze:
1 cup apple cider (not vinegar)
2 tbsp Dijon mustard
2 tbsp brown sugar
1 tbsp apple cider vinegar
1 tbsp butter
Optional garnish:
Fresh thyme
Thin apple slices
Instructions
Preheat oven to 400°F.
Pat pork dry.
Rub with olive oil, salt, pepper, garlic powder, thyme.
Place in baking dish.
Roast 20–25 minutes until internal temp reaches 145°F.
Remove and rest 10 minutes before slicing.
While pork roasts:
In small saucepan, combine apple cider, Dijon, brown sugar, vinegar.
Simmer 8–10 minutes until slightly reduced.
Turn off heat and stir in butter.
Slice pork and spoon glaze over top.
Serve on a long serving tray for dramatic (but easy) presentation.
