Making a Whole Wheat Pie Crust

Created for LSU Food Lab Class, under Professor Judy Myhand
Ingredients for Pie Crust:
1 C whole wheat
1/2 C white flour
2 t sugar
1/2 t salt
½ c. cold butter, sliced
4-5 Tbsp. cold milk
Recommend filling crust with a wild blueberry lemon thyme mixture
Ingredients:
3 cups frozen wild blueberries (de-thaw overnight, drain liquid)
1 Tbsp corn starch
1/4 cup local honey
1 lemon, zest and juice
1 Tbsp of fresh thyme leaves or 2 tsp of dried thyme
1 teaspoon vanilla extract
Coat blueberries with cornstarch. Add rest of ingredients and gently mix to combine to prevent blueberries from bursting. Place fruit filling in prebaked pie crust. Bake at 325F for 1 hour. Remove from oven and let chill.
For serving, garnish with thyme and lemon zest!
