🛒 Ingredients (makes 4 × 36-oz containers):
For marinade:
• 1 tbsp (9 g) garlic powder 🧄
• 1 tbsp (7 g) paprika 🌶️
• 1 tsp (3 g) turmeric ✨
• 1 tbsp (4 g) dried parsley 🌿
• 1 tbsp (5 g) ground coriander 🌱
• 2 tbsp (30 ml) olive oil 🫒
• Salt, to taste 🧂
For main dish:
• 1.5 lb (680 g) chicken thighs, cubed 🍗
• 1 medium red onion (150 g), sliced 🧅
• 1 bell pepper (150 g), chopped 🫑
• 2 medium carrots (140 g), sliced 🥕
• 1 cup (185 g) white rice, uncooked 🍚
• 1½ cups (360 ml) hot water 💧
• 2 bay leaves 🍃
• Fresh parsley, handful 🌿
• 2 lemon slices (for cooking) 🍋
• 8 lemon half-slices (for garnish) 🍋
• Chives, for garnish 🌱
👩🍳 Instructions:
1️⃣ In a bowl, mix garlic powder, paprika, turmeric, dried parsley, coriander, 1 tbsp olive oil, salt, and chicken. Mix well and marinate 1 hour.
2️⃣ Preheat oven to 375°F / 190°C.
3️⃣ Drizzle 1 tbsp olive oil into a large oven dish. Add onion, bell pepper, carrots, rice, and marinated chicken. Mix well.
4️⃣ Pour in hot water, add bay leaves, lemon slices, and fresh parsley. Cover tightly.
5️⃣ Bake 40 minutes covered, then uncover and bake 20 minutes until rice is tender and lightly golden.
6️⃣ Divide into 4 containers. Garnish each with lemon slices and chives.
