Ingredients:
Prepare Gajar (Carrot) Jamun:
• Gajar (Carrots) peeled & washed – 500 g
• Sugar – ⅓ cup or to taste
• Doodh (Milk) – ½ cup
• Ghee (Clarified butter) – 3 tbsp
• Khova - 100g
• Sooji (Semolina) roasted – 3 tbsp
• Doodh (Milk) – ½ cup
• Corn flour – 3 tsp
• Hari elaichi powder (Green cardamom powder) – ½ tsp
Prepare Rabri Doodh:
• Doodh (Milk) – 3 cups
• Condensed milk – ½ cup
• Corn flour – 3 tbsp
• milk – 3 tbsp
• Elaichi powder (Cardamom powder) – ½ tsp
• Pista (Pistachios) chopped – as required
• Badam (Almonds) chopped – as required
Assembling / Garnish:
• Pista (Pistachios) sliced
• Badam (Almonds) sliced
Direction:
Prepare Gajar Jamun:
• Cut carrots into small pieces and add to a chopper.
• Add sugar and ½ cup milk, chop well.
• In a wok, add chopped carrot mixture and cook on medium flame for 2–3 minutes.
• Cover and cook on low flame until carrots are tender.
•. Add khova and mix well, cook for 2 minutes
• Add ghee and roasted sooji, mix well.
• Add remaining ½ cup milk, mix well and cook on medium flame for 7–8 minutes, stirring continuously, until the mixture dries up.
• Add corn flour, mix well and cook for 2–3 minutes.
• Add green cardamom powder, mix well.
• Switch off the flame and let the mixture cool completely.
• Take small portions, roll into smooth balls and set aside.
Prepare Rabri Doodh:
• In a wok, add milk and bring it to a boil.
• Cook on low flame for 8–10 minutes until milk reduces slightly, stirring in between.
• Add condensed milk and mix well.
• In a bowl, mix corn flour and milk whisk well.
• Add this mixture gradually to the milk, stirring continuously.
• Cook on medium flame for 1–2 minutes until thickened.
• Add cardamom powder and chopped dry fruits, mix well.
Assembling:
• Add prepared carrot jamuns into warm rabri.
• Garnish with silver leaf, sliced pistachios and almonds.
• Serve warm or chilled.
