Ingredients:
1 pound pasta, medium-sized shape
1 bunch kale (about 1 pound), stems removed, chopped or torn or chiffonade
1 heaping Tbsp chopped fresh sage
1 heaping Tbsp chopped fresh thyme, plus more for garnish
½ cup grated parmesan
1 cup grated Gruyère
1 cup mozzarella
1 ½ cups pureed butternut squash (or 1 medium squash - see recipe for how to prepare it)
2 garlic cloves
1 tsp kosher salt
½ tsp black pepper
½ cup heavy cream or half-and-half
¼ cup vegetable broth
½ cup ricotta cheese
