We start baking at a higher temperature to get a beautiful rise, then finish low and slow for a tender crumb. Perfect for breakfast, snacks, or dessert — and even better with a pat of butter or a drizzle of honey!
Ingredients:
1 1/2 cups (180 g) all-purpose flour
3/4 cup (150 g) sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
Dash of nutmeg
1/2 cup (113 g / 1 stick) butter, melted
3 overripe bananas (about 1 1/2 cups, mashed)
2 large eggs (room temperature)
1 teaspoon vanilla extract
Baking Instructions:
Preheat oven to 425°F (220°C).
Bake at 425°F for 5 minutes, then reduce to 350°F (175°C).
Continue baking 15–20 minutes, or until a toothpick inserted in the center comes out clean.
Cool slightly before slicing.
