Fermented Lemonade Finnish Sima Summer Drink

Directions
Boil 8 c filtered water
Add 2 sliced lemons with peels and 1/2 c honey
Allow mixture to cool to 110 degrees.
Add 1/16 tsp yeast
Store covered with a tea towel on a counter for 24 hrs.
After 24 hrs, check to see if there are bubbles or a bit of foam on the top.
Strain out lemons. Place 1 tsp of sugar and 5-6 raisins in each stopper-topped bottle or Mason jar with tight lids. Pour sima mixture into bottles/jars, and close stopper-tops/lids. Leave room in bottles/jars for gas expansion.
Continue to store at room temperature for another 24 hrs. Burp bottles after 12 hrs or so. When the raisins have risen to the top, the sima is ready to drink. Put in the refrigerator to slow fermentation process and enjoy!
