Ingredients
• 600g minced meat (lamb or beef)
• 1 medium onion, grated and drained
• 1 tablespoon turmeric
• 1 tablespoon sumac
• A few saffron threads (or 0.2g saffron powder)
• Salt
• Pepper
• 4 tomatoes
• 2 onions
• 400g basmati rice
• Sunflower oil
• A few saffron threads (or 0.2g saffron powder)
Instructions
1. Prepare the basmati rice by rinsing it until the water runs clear, then steam it with saffron until golden brown.
2. Mix the ground meat with the grated onion, turmeric, sumac, saffron, salt, and pepper. Shape the mixture into 4-inch-long rolls.
3. Grill the meat rolls over an open flame until cooked through.
4. Grill the tomatoes and onions until softened and slightly charred.
5. Serve the hot rice with the meat rolls, grilled tomatoes and onions, and garnish with sumac, fresh basil, and raw onions.
