Another #winterwarmer recipe using lamb shoulder/neck, some root veg and the slow cooking in a beef broth flavoured with Guinness. This tastes delicious on its own, or serve this up over some creamy mash or paired with crusty bread.
Guinness #LambStew
600g lamb shoulder (or lamb neck)
2 - 3 tbs flour
2 tsp fennel seeds (ground)
2 - 3 carrots chopped in bite sized chunks
5 - 8 baby potatoes
2 large onion, quartered
3 cloves of garlic, minced
1 celery minced
One can of Guinness
600ml of beef stock
Salt and pepper
4 - 5 sprigs of thyme
Handful of bay leaves
Fresh Parsley (garnish)
Instructions:
Coat the meat in crushed fennel, flour, salt and pepper and brown this batches. Remove from the pan and reduce heat to medium.
Add a drop of water, oil to deglaze the pan and lift/scrape any bits from the lamb. Sauté the diced onion, celery, minced garlic in the pan and then dust with some flour.
Pour in the can of Guinness, followed by beef stock, a little at a time and the browned lamb. Bring to a simmer for 5 minutes. Then add the carrots, onions, thyme and bay leaf to the pot. Cover and simmer for 2 hours.
Add potatoes, then simmer on low heat for a further 20 - 25 minutes with lid partially covered removed.
This is a pretty simple dish that only requires one to brown the lamb and sauté some vegetables. Adding the beer and broth you cover and forget about it for a few hours. This Guinness Irish Stew is a keeper!
