Valerie’s Taco Shells
3 large eggs
11/2 cups milk
2 tbsp melted butter (I use heaping Tbsp)
1 tsp salt (I used scant tsp)
½ cup cornmeal
1 cup flour
Whisk eggs and milk (do not overbeat) then whisk in melted butter & salt.
Whisk in cornmeal.
Slowly add flour as you continue to whisk until all is incorporated and smooth.
You might have to grease the pan for the first one but not after that. (if you melt your butter in your small fry pan and then scrape into the batter, this will work for the first and only grease as the batter will make its own as you make each taco shell)
Use a small stick-free frying pan (or crepe pan).
Use medium to medium-high heat. (this will depend on your pan and your burner)
*** In the video I said about 3 minutes for the first side, but in fact it is about 1 minute to 11/2 minutes for the first side and about 30 seconds for the other side and this will depend on your heat and your pan!
Put 1/3 cup mixture (I use a scant 1/3) into the frying pan in the middle and try to drop it in in a circle if you can -- then pick up the frying pan and tilt it in circle to get a “circle” 6-7 inch diameter shell and cook until you see bubbles or it looks dry; Flip the shell and cook about 30 seconds longer.
Take shell out, put it on a plate and immediately pour 1/3 mixture for next shell and so-on.
These freeze very well and are easily heated in the microwave.
