DRUMSTICK CURRY
INGREDIENTS
• Drumsticks-12
• Jaggery-a small piece
• Salt to taste paste into the cooked drumsticks
• Cook on slow fire for 10-15
• Grated coconut-1/2
• Red chillies-1
• Jeera-1 tsp
• Coriander seeds roasted-2 tbsp
• Urad daal roasted-1 tsp
• Methi seeds-4-5
• Flakes garlic-2
• Turmeric-1/4 tsp
• Tamarind- marble size
• Oil-2 tbsp
• Mustard seeds-1 tsp
• Curry leaves-1 sprig
• Urad daal-1 tsp
• Garlic crushed with skin-7-8
METHOD
• Remove the top skin of drumsticks, cut into 3 pieces, soak in water for 5 mins
• Remove from water and cook the drumsticks with ½ cups of water, salt and jaggery
• Grind together the masala ingredients into fine paste
• Add coconut grind
• Add the masala paste into the cooked drumsticks
• Cook on slow fire for 10-15 mins
• Season with oil, mustard seeds, garlic, urad dhal and curry leaves.
