Syns per serving - FREE
Serves 4
For the fishcakes:
400g mashed potato
2 x tins tuna in spring water, drained
2 tbsp capers, drained and rinsed
1/2 small pack fresh parsley
3 boiled eggs, chopped
6 spring onions, chopped
juice of ½ lemon
For the salsa:
2 spring onions chopped
100g of sweetcorn, drained
1 large tomato, chopped
juice of ½ lemon
Cook the potatoes in boiling water until tender. Drain well and mash
Stir in the tuna, capers, parsley, egg and spring onions. Add the juice from half a lemon, season with salt and pepper and divide the mixture into four equal portions. Shape them into large cakes on a non stick baking tray and bake in the oven 200c / fan 180c/ gas 6 for 20 minutes or until nicely browned.
Make the salsa by mixing the spring onions with sweetcorn and tomato. Add the lemon juice and season to taste.
Serve with salad or Speed vegetables.
