Welcome to HEALTHY BREAD LAB 🍞✨
Today I’m baking the same healthy fitness bread, but this time in a smaller batch.
👉 All ingredients are reduced to 1/3 of the original recipe, making it perfect for baking just one loaf instead of a large batch.
This is a simple homemade bread inspired by an old family method. No fancy tricks, no shortcuts. Just good flour, healthy seeds, and time. A bread that feels real, filling, and comforting.
🥖 Ingredients (1/3 batch – one loaf):
320g strong white flour
30g whole wheat flour
20g rye flour
20g barley flour
10g easy-rye mix
6g instant yeast
70g sourdough starter
8g sugar
8g salt
45g soft butter
247g very cold water
Seeds of choice (chia, sesame, nigella)
🔥 Method (simple & home-style):
Mix all ingredients and knead until smooth.
First rest: 45 minutes.
Shape the dough and let it rest for 10 minutes.
Final proof until doubled in size (about 45 minutes).
Lightly dust with flour and score the dough.
Bake at 220°C (428°F) with steam for 7 minutes, then bake for 15–20 minutes until golden brown.
🍞 The result:
Crispy on the outside, soft and moist inside, full of seeds and natural flavor. Perfect for breakfast, sandwiches, or enjoying warm on its own.
