Delicious Zi Char Style Singapore Curry Fish Head 咖喱鱼头 Step-By-Step Guide | Chinese Curry Recipe
Serves 3-4 as the main dish with rice or 5-6 as part of a larger meal

INGREDIENTS

For the Rempah
15 dried chillies, rehydrated and deseeded
20g (0.7 oz) young ginger
4 fresh red chillies, deseeded
5 cloves garlic
10 shallots
2 – 3 tbsp cooking oil

Other Ingredients
2 sprigs curry leaves
2 lemongrass stalks, white part only
10g (0.35 oz) belacan, dry toasted
2 ½ tbsp fish curry powder
1 litre (33.8 fl oz) water
1 anchovy (ikan bilis) stock cube
Asam or tamarind water (see below)
1 tsp sugar
2 tbsp fish sauce
1 whole tomato, cut into wedges
200g (7.05 oz) aubergine (eggplant or brinjal), cut into finger-length chunks
100g (3.5 oz) long beans, cut into finger-length pieces
4 tofu puffs, cut in half
500 – 600g (17.6 - 21.2 oz) red snapper or grouper fish head or fish meat
5 okra (lady's fingers), cut into smaller pieces
150ml (5.07 fl oz) coconut milk

For the Tamarind Water or Asam Water
1 tbsp tamarind paste
200ml (6.76 fl oz) hot water
