INGREDIENTS:
1 can Coconut Cream (for latik)
4 cups Coconut Milk
2 cups Glutinous Flour
1 cup Sugar or Condensed Milk
1 cup Grated Purple Yam
1 Tbsp. Ube Extract
PROCEDURE:
Pour coconut cream in a saucepan over medium heat. Bring to a boil. Lower the heat and continously stir until curds turn golden brown. Strain the latik and set aside.
Then pour coconut milk in a pan at medium heat. Add glutinous rice flour gradually. Add purple yam, sugar and ube extract. Mix until well combined. Continously stir until sticky. Cook for about 45 mins. to 1 hr. and set aside.
Grease pan with oil from latik. Transfer the cooked mixture to the greased pan. Level it and brush the cooked mixture with oil on top.
Then trasfer to a serving plate. Slice to the shape you desired. And it is ready to eat!
