These delicious Cheesy Mashed Potato Pancakes are soft and buttery on the inside and crispy on the outside. Perfect for breakfast, lunch, or dinner, they taste great on their own or dressed up with sour cream and cilantro!

Russet Potatoes
Butter
White Onion
Cheddar Cheese
Salt
Garlic Powder
Egg
Corn Starch

RECIPE NOTES FOR MAKING THE BEST CHEESY MASHED POTATO PANCAKES:
The pancakes will be soggy if your oil isn’t hot enough. Make sure it heats up enough before you add your pancakes, and always let it come back to temperature between batches!
These savoury pancakes can be stored in an airtight container, in the refrigerator for up to 3 days.
Using a 1/2 cup measuring cup does make somewhat larger pancakes. You can make 12 smaller 1/4 cup pancakes if preferred.
You can skip the cilantro if you prefer. You can also add green onion, chives or parsley instead if you’d like to.
Potato or tapioca starch can be used instead of using corn starch if needed. You can also use a gluten free flour mix instead.
Use cold mashed potatoes because they are easier to work with when shaping the pancakes.
Serve the mashed potato pancakes hot with a dollop of sour cream and garnish with your favourite herbs such as cilantro, dill or green onion.
