Warm, wholesome, and perfectly moist — these Classic Bran Muffins are the ultimate feel-good breakfast. Made with buttermilk, wheat bran, brown sugar, and a hint of vanilla, this recipe delivers delicious muffins packed with fiber and flavor.
Optional add-ins like raisins, dates, dried cranberries, pumpkin seeds, or sunflower seeds make this recipe super customizable!
📌 What You’ll Need:
1 ½ cups wheat bran
1 cup buttermilk
⅓ cup vegetable oil
⅔ cup brown sugar
1 egg
½ tsp vanilla
1 cup all-purpose flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
½ cup raisins or dates (optional)
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease lightly.
In a large bowl, combine wheat bran and buttermilk. Stir and let the mixture soak for 5 minutes to soften.
Add the following to the soaked bran mixture: vegetable oil, brown sugar, lightly beaten egg and vanilla. Mix until well combined.
In a separate bowl, whisk together all-purpose flour, baking soda, baking powder and salt
Add the dry ingredients to the wet mixture. Stir just until combined — do not overmix.
Add Optional Mix-Ins:
Fold in ½ cup raisins or dates, if using.
(Or substitute dried apricots, dried cranberries, sunflower seeds, or pumpkin seeds.)
Spoon the batter evenly into the prepared muffin cups.
Bake for 15–20 minutes, or until the tops spring back when touched.
Allow muffins to cool in the pan for a few minutes.
Transfer to a rack and enjoy warm or at room temperature.
