Ingredients:
Sauce:
Dried seaweed, finely ground - ¼ tsp
Dried shiitake, finely ground - ¼ tsp
Preserved bean paste/Miso - 1 tsp
Light soy sauce - 2 tbsp or to taste
Dark soy sauce - 1 tsp
Sugar - 1 tsp
White pepper, ground - ⅛ tsp
Water - 3 tbsp

Bean thread (Glass) noodles - 2 bunches
Tofu, extra-firm - ¼ block
Turmeric, ground - pinch
Canola oil - 1 tbsp
Garlic, minced - ½ tbsp
Green onion, green and white separated, finely sliced - 2 stalks
Cherry tomatoes, halved - a few
Mung bean sprouts - 1 large handful
Spinach - 1 large handful
