Today I’m bringing you Persian Three-Flour Halva 🍮✨ — a heavenly dessert 😍 with a simple recipe 📖👩🍳 that anyone can master at home 🏡. 🍚🥧 Ingredients
White flour: 1 cup 🍚
Rice flour: 1 cup 🍚
Chickpea flour: 1 cup 🌿
Vegetable butter: 100 g 🧈
Liquid oil: 1 ½ cups 🫒
Cocoa powder: 1 tbsp 🍫
Mini tart shells: as desired 🥧
🍬🌸 Syrup for Halva
Sugar: 3 cups 🍬
Water: 3 cups 💧
Cardamom powder: ½ tsp 🌿
Strong brewed saffron: 2 tbsp 🌸
🔥🍯 Preparing the Syrup
Place all syrup ingredients in a large pot 🥘, stir 🌀, and heat 🔥 until the sugar dissolves 🍬 and the mixture becomes uniform ✨.
🍮 Preparing the Halva
1️⃣ Roast the white flour 🍚 over very low heat 🔥 for 30 minutes ⏳.
2️⃣ Add the rice flour 🍚 and roast for another 10 minutes ⏳.
3️⃣ Add the chickpea flour 🌿 and roast for 10 more minutes ⏳.
4️⃣ Add the butter 🧈 and stir 🌀 until it blends with the flour 🍚.
5️⃣ Gradually add the oil 🫒 until the texture becomes slightly thin ✨.
6️⃣ Roast 🔥 until it reaches the desired color 🎨.
7️⃣ Add the syrup 🍯 in two stages , stirring 🌀 until the halva thickens 💪 and comes together 🤲.
8️⃣ Mix part of the halva with cocoa powder 🍫 and pipe 🌸 flower decorations 🌹 on the saffron halva 🌼.
📌💡 Notes
The syrup must be warm 🔥 when added ➕.
Let the flours rest ⏳ a bit after roasting 🔥.
Always roast on very low heat 🌡️.
Pipe shapes 🍰 while the halva is still warm 🔥.
