I could also buff other types like Grass and Rock, but I can't think of many interesting changes for them. For Grass, all of its weaknesses make sense, so besides letting it resist Fairy, I can really only neutralize some of its NVE hits. But even then, Fire, Grass, and Dragon are consistent with the other starter types; Poison needs to maintain its defensive profile; and I'm pretty sure plants can't erode Steel. That leaves Flying and Bug which is probably for the best since Grass is arguably their least valuable resistance anyway (especially with the buffs to Bug in this video). And thematically, even though some birds and bugs eat plants, it doesn't mean they have to resist them. It wouldn't be a huge change, but it would at least give Grass better neutral coverage.
As for Rock, I can really only afford to remove its Ground weakness since Grass, Water, and Steel's SE coverage doesn't need to be any lower, and Fighting's SE coverage is already balanced by the equally broad range of Pokemon that resist it.
I don't want to buff Normal since it's intentionally mediocre. I could also nerf types like Steel, but I don't feel like sifting through its resistances to figure out which ones should go. Meanwhile, other types like Ghost, Psychic, and Poison, basically got covered within the video so I don't have much else to say about them.
