Ingredients:
1 cup fine yellow cornmeal
2 cups water (for mixing cornmeal)
2 cups coconut milk (or regular milk)
1 ½ cups water (for boiling)
½ tsp salt
1 cinnamon stick (or ½ tsp ground cinnamon)
½ tsp nutmeg (grated or ground)
1 tsp vanilla extract
½ cup condensed milk (or sweeten to taste)
Optional: ¼ cup sugar or brown sugar
Optional: Bay leaf (1 for extra flavor)
🍲 Directions:
1. Mix cornmeal: In a bowl, whisk 1 cup cornmeal with 2 cups water until smooth—no lumps.
2. Boil liquid: In a pot, bring 2 cups coconut milk and 1½ cups water to a boil over medium heat. Add salt, cinnamon stick, and optional bay leaf.
3. Add cornmeal: Slowly pour in the cornmeal mixture while stirring constantly to prevent lumps.
4. Cook & stir: Lower the heat and keep stirring for about 10–15 minutes until it thickens.
5. Season: Add nutmeg, vanilla, and condensed milk. Stir well. Taste and sweeten more if needed.
6. Simmer: Cover and simmer on low for another 5–10 minutes, stirring occasionally.
7. Serve hot: Drizzle with more milk or condensed milk on top if you like.
