Ingredients:
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves (optional)
1/4 teaspoon ginger (optional)
1/2 cup vegetable oil
1 1/2 cups sugar
2 large eggs
1 can (15 oz) pumpkin puree
1/4 cup water
1 teaspoon vanilla extract
1/2 cup chopped walnuts or chocolate chips (optional)
Instructions:
Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
In a large bowl, beat together the vegetable oil and sugar until smooth. Add eggs, one at a time, beating well after each addition.
Stir in the pumpkin puree, water, and vanilla extract until combined.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
If you’re adding walnuts or chocolate chips, fold them in at this stage.
Pour the batter into the prepared loaf pan and spread evenly.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
