Ingredients
• Shortcrust pastry – enough for base + lattice top (about 500 g / 17.5 oz)
• Tinned peaches – 1 large tin (approx. 820 g / drained 480 g fruit / 2 cups / 300 g / 475 ml / 1 UK cup / 1 US cup), sliced
• Granulated sugar – ½ cup / 100 g
• Cornstarch (cornflour) – 2 tbsp / 16 g
• Sour cream – ½ cup / 120 g
• Egg yolk – 1 large (about 18 g)
• Vanilla extract – 1 tsp / 5 g / 5 ml
• Ground cinnamon – ½ tsp / 1.5 g
• Milk (for brushing lattice) – 2 tbsp / 30 g
• Extra sugar – 1 tbsp / 12 g for sprinkling
Preheat oven: 190°C / 375°F (fan 170°C).
9-inch pie dish
Bake: 40–45 minutes, until the filling is set and the lattice is golden brown.
