Ingredients:
1 pound ground beef (or your choice of meat, try some ground chicken or venison)
3 russet potatoes, sliced 1/4-inch thick (or any potatoes you want to try)
1 sweet onion sliced or diced up
1 can diced tomatoes (preferably fire-roasted do not drain)
2 green bell peppers sliced or chopped up
salt and pepper, to taste
optional additions: diced butter pieces, 1/2 teaspoon garlic powder, 1 teaspoon crushed red pepper flakes, about 5-6 pepperoncini (drained and chopped up)
Instructions:
-Preheat the oven to 350 degrees and spray a casserole dish with nonstick cooking spray.
-Set a large skillet over medium-high heat. Once hot, add the ground beef and cook, stirring and breaking up with a spoon, until no longer pink, about 8-10 minutes. Season to taste with salt and pepper; stir in garlic powder and crushed red pepper, if using.
-Cover the bottom of the prepared baking dish with potatoes and season well with salt and pepper (and add butter, if using). Top with the cooked ground beef then sliced onions. Season with salt and pepper, then the diced tomatoes and the bell peppers, as well as pepperoncini if using. Cover with foil and bake for 2 hours.
-Take out and let cool down for about 5-6 minutes. We topped with a little shredded cheese and used a slight layer of rice as a base.
