Today we’re making a crispy, flavour-packed classic — Qeeme Ki Poori / Qeema Kachori.
These golden, puffed pooris are stuffed with perfectly spiced mutton mince (qeema), cooked with onions, spices and fresh coriander. Crispy on the outside and juicy inside, they make the perfect breakfast, snack or daawat special dish.
If you love stuffed breads and desi flavours, this recipe is a must-try.
🥣 Ingredients
For Qeema Filling
• Chopped onions – 4 tbsp
• Ginger garlic paste – 1 tbsp
• Mutton mince – 500 g
• Salt – to taste
• Red chilli powder – 1 tsp
• Turmeric – 1 pinch
• Coriander powder – 1 tbsp
• Green chilli (chopped) – 1 tbsp
• Chaat masala – 1 tsp
• Besan – 1 tbsp
• Fresh coriander
For Dough
• Wheat flour – 1 kg
• Salt – to taste
• Ajwain – 1 tsp
• Refined oil – 2 tbsp
• Water – to knead
👨🍳 Method
Cook chopped onions in oil until brown.
Add ginger garlic paste and mutton mince. Cook till qeema changes colour.
Add spices, green chilli and chaat masala.
Add water and pressure cook for 4 whistles.
Once cooked, dry any excess moisture and mix in besan for binding.
Add fresh coriander and let stuffing cool.
For dough, mix flour, salt, ajwain and oil.
Add water and knead into a soft, shiny dough. Rest for 10 minutes.
Make small discs, fill with qeema stuffing, seal and flatten gently.
Heat oil and fry until golden and crispy.
Serve hot with coriander yoghurt dip or chutney.
