Dak gets a little nervous using dry active yeast on camera because, well. Ju called yeast a fickle mistress and just because that didn't make the final edit of this video doesn't make it any less true. She is mysterious and very much alive. It always surprises us how cool lukewarm water feels—you really don't need it to be that warm for the yeast to proof, and it also ensures that you won't kill it. We used a kitchen scale to weigh most ingredients in this recipe, but you can also just measure them out.

There are a couple stop and wait periods to let the dough rise and relax, but we honestly needed that time anyway: to let us hydrate, nosh and talk about [redacted]. This was our 6th video we filmed in one day in an attempt to get a bunch in a weekend together (for which we quarantined). You'll likely notice an outfit change, a crooked camera and our especially suspicious personalities as a result of this long weekend—oh well!
